Chicken is considered a healthy meat because its protein/fat ratio is better compared to other kinds of meat. As an added bonus the fat in chicken meat is far less saturated than in red meats, supplying a better proportion of healthier monosaturates and polyunsaturates
Unprocessed poultry products contain a high percentage of unsaturated fat which helps to reduce blood cholesterol and so help maintain a healthy heart

Succulent and Tender Roast Chicken Recipe
Simon Dougan from the Yellow Door Deli has provided us with his recipe for whole roast chicken. This recipe also works for bone in chicken thighs, but obviously (depending on their size) the cooking time should be reduced to about 30-40 minutes.
As with all meat it is always important to rest your chicken to allow it to relax and absorb the juices.
